Oxygen

Oxygen

Most bacteria are aerobic (need oxygen to survive) and some can even survive in the absence of oxygen (anaerobic). Some bacteria are able to breath both oxygen and carbon dioxide. We can control bacteria by removing air or packing food with other gasses such as nitrogen. Vacuum Packaging wherein air is removed and packaging such as MAP (Modified Atmosphere Packaging) are examples techniques of removing or limiting oxygen in packaging.
