Awareness of potential hazards at the delivery/receipt stage and how hazards could be identified and remedied is important in ensuring good hygiene practices in any business.
Food and packaging materials may be contaminated before they are received on any business premises. All food contact material must comply with legal requirements. Food contact materials (FCM) are anything that can be in contact with food. This includes food packaging but also other materials or articles such as cutlery, straws, chopping boards, conveyor belts and other machinery used to manufacture food, etc.
Supplies that are used for production/preparation must be carefully controlled by continuous monitoring and by working relationships with suppliers and provide them with specifications, as well as providing feedback on their performance. Suppliers of raw materials must only be selected only after following appropriate assessments and approvals.
