Corrective Action -Delivery and Storage

Corrective Action for Food Delivery 

Do not accept any food that do not the meet required specification. 

Chilled foods must be delivered at a temperature of 0°C to 5°C. If at time of delivery the temperature of chilled foods is not 0°C to 5°C, the following corrective action shall be taken:

If between 5°C to 8°C, assess risk and restore quickly to below 5°C.

If above 8°C, assess risk, use immediately or discard.

Frozen foods must be delivered at ≥ -18°C. If at time of delivery the temperature of frozen foods is not at -18°C, the following corrective action must be taken:

If above -12°C or has signs of thawing, use immediately or risk assess or reject/return to the supplier.

Food is deemed spoiled when it is unfit for human consumption in situations below but not limited to:

  • Microbial and enzyme activity - Adversely change a food's colour, taste, smell, appearance or texture e.g., moulds and yeast.
  • Chemical contamination - Food in contact with substances not intended for human consumption e.g., cleaning sprays, chemicals, fly sprays, machine lubricants.
  • Physical contamination - Undesirable foreign objects have contaminated food, e.g. human hair, metals, pest infestation.
