Sanitisers
Sanitisers are combined detergents and disinfectants. They are widely used in the food sector. Sanitisers can either incorporate a chlorine releasing compound or an ammonium compound which acts as the disinfectant. They may be less effective than disinfectants in destroying bacteria, but play a useful role in cleaning.
Sterilant
Sterilants are chemicals that kill all bacteria. Boiling water at 100°C is a sterilant. Sterilisation may not be practical in food premises as it will quickly become re-contaminated.
