Some important guidelines for maintaining roofs and grounds:
- Where a food business has control over the grounds, they should be kept free from litter, uncut weeds and grass, waste and other materials to prevent harbourage of pest.
- The grounds must be kept free from conditions that could permit contamination of food, e.g., badly maintained yards or exteriors of premises could result in foot borne contamination being carried into the premises.
- An external water supply or tap should be located in the yard to aid cleaning
- The yards, roadway etc. that are in close proximity to the kitchen or food storage areas must be suitable surfaced, sloped and effectively drained
- Roofs, valleys and gutters must be maintained to prevent dampness or water from entering the premises.
