Pot Wash
Pot wash might be provided by automatic pot-washing machines in larger establishments but even smaller premises must have at least two deep bowl sinks with adequate drainage space for the exclusive use of pot washing. This facility is often located adjacent to the cooking area where dirty pots are generated. Proper pot-racking facilities are essential. Apart from having preferably jointless, hygienic floors, pot wash areas should also be slip-resistant.
The Cleaning Store and Mop Sink Room
The cleaning store and mop sink room should also be located as near as possible to the back yard or rear staff entry point and should contain a low-level mop sink which is serviced with hot and cold water and wall hooks to hang up wet mops for drying. The size of the cleaning store depends on the volume of the business and the range of products handled.
