Food businesses must document and must be able to demonstrate how food safety management systems are in place. In the case of catering and retailing, this requirement may be addressed by stating that food safety is managed by complying with I.S. 340:2007 AI:2015 Hygiene in Catering Sector or I.S. 341:2007 AI:2015 Hygiene in Food Retailing and Wholesaling.
