Do`s and Don`ts to prevent cross-contamination

Do`s

  • Thoroughly wash and dry your hands after handling raw food.
  • Keep raw and ready-to-eat foods separate.
  • Store raw meat in sealable containers at the bottom of the fridge, so that juices cannot drip onto other foods.
  • Use a different chopping board for raw food and ready-to-eat food (or wash the board thoroughly in hot water and detergent between uses).
  • Wash knives and other utensils thoroughly in hot water and detergent after they have been used with raw food, and before they are used on a different type of food.
  • Use a new or freshly washed cloth to clean work surfaces before preparing ready-to-eat food.

Don`ts

  • Move from preparing one type of food to another without thoroughly cleaning surfaces and equipment in between.
  • Move from preparing one type of food to another without thoroughly washing and drying your hands in between.
  • Wash raw meat or poultry before cooking, as any harmful bacteria could be spread around in water splashes. Please note that any bacteria in the meat will be killed when adequately cooked.
  • Should things go wrong, inform your manager or Supervisor as soon as possible. Any contaminated food, or foods that may have become contaminated should be disposed of as per best practice.
