Freezer Storage
Risks associated with Freezer storage are Freezer burn and poor freezing because of poor air flow and ice formation.

Tips for effective freezer storage
- Maintain food temperature at or below -18°C (It is important that foods are in good condition before freezer storage because freezing g retards bacterial growth but will not necessarily kill them).
- All deliveries of frozen food must be placed in a freezer without delay.
- Check and record temperatures at least twice a day.
- Allow good air flow and do not overload the door must not remain open longer than is absolutely necessary.
- Food frozen once should not be refrozen unless cooked.
- Store raw and cooked food separately.
- Seal and wrap all foods preferably in freezer bags or similar.
- Ensure stock rotation.
- Freeze food in portions.
- Food should be segregated into cooked and uncooked and labelled correctly including the date of storage.
