Freezer Storage
Freezing is effective in preventing bacterial growth and allows food to be stored for a long period of time. Remember, freezing does not kill bacteria.
- Food should be suitably wrapped or placed in sealed containers to prevent cross-contamination and freezer burn.
- Freeze food in portions.
- Label and date food prior to placing in freezer to stock rotation.
- Never refreeze the food that has been already defrosted. Freeze food once only. When defrosted, bacteria can multiply. If this is frozen again the number of bacteria could be at a dangerous level if bacterial growth is allowed during the defrosting process.
- Defrosted food can be frozen only if it is cooked after defrosting. For example, frozen mince can be defrosted, used to make Cottage Pie which can subsequently be frozen.
