Waste has to be managed at all stages of a food business in a manner appropriate to the risk associated with the type of waste generated.
A designated area must be provided for all waste generated.
Pest control measures must be in place in all waste handling & storage areas.
Outer food packaging that has become soiled or contaminated must be treated as food waste & not recycled.
Operational Waste/Waste Holding
Suitable bins must be provided at appropriate locations within the food premises for the storage of waste.
Waste storage containers must well maintained & closable, durable, easy to clean & sanitise.
All waste must be removed from the operational areas as necessary but at least daily
In food preparation areas where lidded bins are provided, they must be foot pedal operated or a suitable alternative.
Where waste is stored in plastic bags they must be closed securely, removed frequently, stored and transported in a manner that does not pose a risk to food safety.
Internal Waste Storage
Where waste is stored internally a separate designated room of adequate size to accommodate all waste must be provided, suitably constructed, ventilated and maintained
Waste store must not open directly to a food room.
External Waste Storage
A water hose should be available for cleaning down the waste storage area
Waste must not be incinerated on site, unless written approval has been given by the appropriate authorities
Refuse must be deposited in closable containers which are pest proofed and kept closed.
External waste storage and handling areas must be suitably constructed & finished, easy to clean and maintained in a hygienic manner.
The waste storage area should be suitably drained and connected to a drainage system serving the premises.
A supply of water should be available to clean the external waste storage areas.
The waste storage units used for external storage of waste must not be accessible to pests and should be emptied as required.
External storage units must be closed at all times and placed on suitable solid surfaces that are easy to clean.
