Chapter 12 of Regulation ECN 862/2004 which is headed "Training" states that food business operators are to ensure:
- Food handlers are supervised and instructed and/or trained in food hygiene matters to commensurate with their work activity.
- Staff responsible for the development and maintenance of HACCP systems, must receive adequate training.
- Staff have received training required by the national legislation.
