Receiving Supplies
The control of allergenic contamination and cross-contamination should begin as soon as ingredients and prepacked products received at your premises and following are list of control measures that can be practices to ensure no contamination occurs.
- Person responsible for receiving food deliveries must check the contents of the delivery against the original purchase specification.
- Ensure that the ingredients and products you have received are the same as what you expected.
- Retain the ingredients lists for all prepacked food products in an accessible place where all members of staff can find them. These can be cut out or removed from the product packaging, written onto a document or a digital copy be maintained.
- Make a note of any ingredient substitutions. For example, if a prepacked food product has been made to a changed/altered recipe. Any such changes must be recorded.
- Ensure that all staff members are ware of any substitutions or changes so that consumers can be informed.
